How are eggs classified?

Chicken eggs produced for consumption are classified according to their category. This can be A, that is, fresh eggs that have not undergone treatment and are intended for direct human consumption; B or chilled eggs and C or eggs intended for industrial consumption. Category A eggs must meet certain specifications, such as shell cleanliness and integrity. If they are not fulfilled, they go to category B. In addition, within category A eggs are classified according to their class, which depends on their weight. There are sizes XL -eggs over 73 grams-, L, M and S -of 53 grams-. The tasks of collection, classification and packaging are automated.
