Why does garlic smell so bad?

A garlic hardly smells if it is not split . When it is done, an enzyme -allinase- acts on an amino acid -allin- converting it into allicin which, by losing its only oxygen atom, is transformed, in turn, into dipropenyl disulfide. This is the main cause of the bad smell that garlic gives off, caused by the two sulfur atoms contained in the center of said molecule.

The ingestion of allicin also develops in our body a compound, methylmercaptan, which, of all the molecular stenches that cause halitosis, is the most unpleasant. Garlic, when cooked, evaporates a large amount of allicin. But if it is eaten raw, it is better to look for solutions that prevent the effects of a face to face. Increasing the flow of saliva by chewing gum is an option.
