The Serendipty3 restaurant in Manhattan, New York , seems to be the place where the “Crème de la Crème” of French fries is cooked. Each serving of these fries costs $ 200 (which is almost 170 euros in exchange) and were created by creative chef Joe Calderone and corporate executive chef, Fredrick Schoen-Kiewert, who thought of preparing this dish to provide guests with a Unique and delicious French fries experience.

Combining amazing flavors, the recipe of the chef Joe and Fredick includes, among other ingredients: potatoes of the variety Chipperbeck Upstate, Dom Perignon champagne, vinegar Champagne French J. LeBlanc Ardenne, truffle oil, truffle butter and, of course, dust 23k edible gold.

This delicacy is served on a Baccarat crystal arabesque plate , with a matching bowl in which Mornay sauce is served to dip these exquisite fries.

How are the most expensive potatoes in the world made?

To make the fries, the potatoes are first blanched in the Dom Perignon and the J. LeBlanc French champagne vinegar . They are then cooked three times in pure goose fat from southwestern France , to give the exterior a crunchy texture.

On the other side of the kitchen, the velvety mornay sauce that accompanies the fries is first prepared by melting large amounts of truffle butter in the skillet. Chef Fredrick then adds a pinch of flour to make a roux and slowly whips the grass-fed cream from the Jersey cows to thicken the sauce.

Finally, the cubes of Gruyere truffled Swiss raclette are incorporated into the dough, adding a thick creaminess that closely resembles a fondue. The dish is delicately prepared by both chefs, who add truffle flakes, Crete Senesi truffle pecorino cheese, and edible 23k gold dust.

This unprecedented achievement is certainly a happy celebration for Chef Joe, Chef Fredrick and the Serendipity3 staff, as they reopened their restaurant last week. It has been closed to the public since the start of the pandemic in 2020.
