Almussafes recipe: learn how to prepare the famous Valencian sandwich

Today we bring you a recipe for the Almussafes sandwich that you can prepare at home in a very simple way. This typical Valencian dish, named after the municipality of the same name, does not require sophisticated ingredients. A good bread, cheese, caramelized chives and a good sobrasada are enough, although some versions also incorporate ham or bacon. Keep reading and know the step by step of how to make homemade Almussafes sandwiches.

This traditional recipe does not require a lot of time or effort , but it is important to have some patience for the chives to caramelize completely. This detail will make a big difference in the final flavor of the sandwich and below we will explain in details how to do it correctly. Check out:

Ingredients (for 2 people):

  • Glass bread (or another similar one of your preference): 2 units.
  • Emmental or Gouda cheese: 8 slices
  • Chives: 6 pcs.
  • Iberian Sobrasada: 100 gr
  • Extra virgin olive oil: necessary quantity
  • Salt to taste
  • Elaboration:

    1. The first thing we will do is caramelize the chives . To do this, we cut them into feathers or julienne, removing the ends.
    2. In a frying pan, heat a little oil and add the chives with the salt. Sauté over medium heat, stirring constantly until the chives begin to lose volume.
    3. Then we lower the heat and continue cooking gently, stirring from time to time. What we want here is for the chives to slowly release their own sugars and caramelize, leaving them tender and slightly golden. Cooking can take 20 to 40 minutes, depending on your taste (that is, if you prefer chives more or less caramelized).
    4. In another pan, we heat the sobrasada over low heat so that it softens and releases part of its fat.
    5. We cut the loaves in half and spread both sides with a generous amount of sobrasada. Next, we cover the base with the cheese and, on top, we add the caramelized chives.
    6. We close the Almussafes sandwiches with the other half of the bread and press gently.
    7. So that they are more toasted on the outside and the cheese melts, we quickly go through a frying pan or griddle (back and forth) or put in the oven preheated at 200ºC for a few minutes.

    An “extra” tip : as we mentioned at the beginning, there are variations of this classic Valencian sandwich. In this way, if you prefer it more complete, before closing it with the other half of the bread, you can add a few slices of ham or bacon (previously browned in a pan or griddle).
