Apple gazpacho recipe, an original and light dish

Summer is coming and with it the high temperatures. It is when people move away from the stoves and spend more time outdoors, enjoying the sun, the sea or the mountains, if they can travel. In any case, it is the time when we look for other things to eat, refreshing things that alleviate the rigors of summer and provide enough liquid to avoid dehydration, so common in summer. Ingredients:

  • 1 kilo of very ripe pear tomato
  • 1 small green bell pepper
  • 3 Fuji or Pink Lady apples
  • 1 small cucumber
  • 30 ml apple cider vinegar (or to taste)
  • 70 ml of extra virgin olive oil (or to taste)
  • Cold water, the necessary
  • Ice
  • 60 grams of stale bread
  • Salt and pepper
  • How to prepare an apple gazpacho:

    1. Peel the apples and blend them . Soak the stale bread in this juice.
    2. In the blender glass, blend the tomato, cucumber and pepper .
    3. Add a glass of cold water , blend again.
    4. Add the apple juice and the bread , and continue to blend until you get a smooth texture.
