Crunchy, low-fat and with an irresistible smoky flavor – read on and discover two ways to make vegan bacon at home! Vegan Eggplant Bacon Recipe The perfect recipe for those who don’t want to spend a lot of time in the kitchen! In less than 20 minutes, you can make this super healthy, luscious Vegan Eggplant Bacon. Oh, and you can choose to bake them or cook them in a skillet. Take note: Ingredients: Eggplant: ½ unit. medium Soy sauce: 2 tablespoons Agave syrup: 2 tablespoons Liquid smoke: 2 teaspoons Olive oil: 1 tablespoon Apple cider vinegar: 1 tablespoon Paprika: 2 teaspoons Cumin: ½ teaspoon Black pepper to taste Preparation: First thing is to preheat the oven to 120ºC. In a large bowl, mix all the ingredients (except the eggplant). Cut the eggplant in half crosswise and then into strips with a thickness of approximately 3 millimeters. We soak the aubergine in the sauce and shake them a little to remove the excess. Next, we place the aubergines on a plate or baking tray with parchment paper and bake for 45 minutes on each side. When one side is browned and crisp, we turn and continue baking. If you prefer, you can do this cooking in a non-stick pan or with a little olive oil. The technique is the same: cook them over low heat until both sides are golden brown and crisp. Vegan Bacon with Rice Paper Recipe This recipe will take a bit more of your time than the first one. But, you will see that the result is amazing; You will get slices of vegan bacon with a flavor and texture very similar to the original. So, they are worth experiencing! Ingredients: Rice paper: 8 sheets Olive oil: 2 tablespoons Nutritional yeast: 2 tablespoons Tamari sauce: tablespoons Liquid smoke: ½ teaspoon Maple syrup: ½ teaspoon Garlic powder: 1 teaspoon Paprika: ½ teaspoon Black pepper al taste Preparation: First, we cut the rice paper into thick strips, placing one sheet on top of the other. Your knife should be sharp to prevent the rice paper from tearing or cracking too much when you cut it. We preheat the oven to 200º C and line a plate or tray with baking paper. In a bowl, mix all the ingredients, except the rice paper strips, and set aside another container with room temperature water. We take two strips of equal length and moisten each one with water (use a brush to do it more easily). Next, we put one strip on top of the other so that they stick and repeat this step with all the others. With a brush, we paint both sides of each strip of rice paper with the sauce that we prepared in the first step. And one by one, we place it on the tray previously lined with vegetable paper.Once all the strips have been spread, we put them in the preheated oven for about 8 minutes or until they are crisp. Pay close attention to baking, as rice paper burns easily. When they are at the right point, remove the strips from the oven and wait for them to cool to enjoy your vegan bacon. In both cases, you can store your slices of vegan bacon in a sealed jar or bag. At room temperature, they will last about three days, already in the fridge, you can keep them for up to 5 days.
