In appearance , vegan hash browns do not differ from conventional croquettes , in their shape and golden texture. In addition, its flavor is also very similar due to its potato base, and even better, especially because its filling has vegetable cream.

The preparation is very simple and essentially the same as conventional croquettes , which are formed like pancakes, and in this case they are coated in flour, vegetable cream and breadcrumbs.

As fillings, this recipe includes vegetable cheese, although it is compatible with other options, such as vegan ham, peas or mushrooms. The quantities are modified to taste, since the base is only potatoes, and 500 grams of potatoes are recommended for 4 people.

Ingredients:

  • Potatoes
  • Vegetable cheese

  • Bread crumbs
  • Flour
  • Vegetable oil (for frying)
  • Nutmeg
  • Shall
  • Pepper
  • Fresh parsley leaves
  • preparation:

    1. Place the potatoes in a pot of water and boil them until soft. To test their consistency, you can try poking them with a knife. If you can easily pierce them, they are ready to puree.
    2. Drain the potatoes while you wait for them to cool. Then peel and mash them until you get a smooth and thick puree.
    3. Transfer the puree to a bowl, add 1 tablespoon of flour and 1 tablespoon of vegetable cream (for every 500 grams of potatoes) , salt, pepper and nutmeg .
    4. Mix well, forming a ball of dough , cover it and let it cool.
    5. Once cold and solidified, it begins to form the croquettes.
    6. To do this, take a portion of the dough, place it on a plate, flatten it a little with the back of a spoon and add a teaspoon of vegetable cheese in the center. Next, lift the edges, close the dough and roll , turning it in your hands.
    7. Pass each croquette for flour , then for the vegetable cream and, finally, for breadcrumbs.
    8. Pour vegetable oil into a frying pan, wait until it is very hot and fry the croquettes over medium heat, turning them so that they brown evenly. Croquetas veganas.
    9. Remove from the heat and let them drain on kitchen paper.
    10. Once cool, serve and top with chopped fresh parsley.
