With the seasonal vegetables you have at home plus some simple ingredients you can prepare multicolored vegetarian burgers with yogurt sauce , which will not take more than 30 minutes to prepare. Everyone at home will love them, and the kids will enjoy the nutrients in vegetables.

Ingredients (for 4 servings):

  • 400 grams of summer vegetables
  • 200 grams of boiled potatoes
  • 100 grams of zucchini
  • 100 grams of whole wheat bread
  • 50 grams of leek
  • 1 clove garlic
  • 1 egg
  • 3 tablespoons of flour
  • 3 tablespoons of breadcrumbs
  • 2 tablespoons of semolina
  • 2 tablespoons of chopped parsley
  • Oil for frying

  • Yogurt sauce:

    • 250 grams of yogurt
    • 1 lemon
    • 2 sprigs of mint

    preparation:

    1. Wash, peel, and steam your chosen vegetables , with the exception of garlic, onion, and leek.
    2. Finely chop the garlic, cut the onion and leek into rings and sauté them with ½ tablespoon of oil.
    3. Place the chopped cooked vegetables in a bowl, add the stir fry, the chopped parsley and the rest of the ingredients.
    4. Season to taste, stir, and then knead with your hands.
    5. Shape the burgers and place them on a board dusted with breadcrumbs.
    6. Pour 1-2 tablespoons of oil into a nonstick skillet and fry the patties until lightly browned.
