Most of the people around us, and also ourselves, get very annoyed when someone makes noise when slurping a soup, for example, and although in other cultures such as the East, the fact of chewing making noise is a sign of praise towards those who have prepared the Food, in the West, is something that is simply not supported. However, a recent survey seems to have tested what making noise with food entails and aside from the debate whether it is polite or rude , it seems to allow us to improve the quality of food.
Making noise with food improves the quality of the dish according to a new study
It is clear that most of us hate those who make noise while eating, and although in Asia the custom of chewing and being listened to is considered something of good manners, we believe the opposite, but did you know that if you eat and make noise Can you make the dish even tastier?
To demonstrate this, Josef Youssef, founder and chef of Kitchen Theory, along with Charles Spencer from the University of Oxford , fed 207 Western participants who had to taste a vegetable soup. The plate was served in cups or bowls with a spoon and at two different temperatures.
Participants , who preferred the soup when it was served from a cup to when it was served from a bowl, said the taste was “fuller” when they drank the soup making noise . ” The results revealed that the soup had a significantly more intense flavor when sipped , although the participants also felt a bit more self-conscious, ” say the authors of the study published in the International Journal of Food and Gastronomy.
Why this rarity? Taste is a limited sense – our taste buds can only perceive bitter, sweet, salty, acidic, and umami (a flavor found in many cooked meats). The other senses, however, are also part of the equation, such as sight, smell and… hearing! ” Our sense of smell is there to tell us how delicious food can be ,” says Youssef .
The increase in flavor, however, could be related to other factors. In fact, drinking this way could draw more oxygen into your mouth, which could slightly change the flavor of the dish . It is not such an unreasonable thing to come to this conclusion if we take into account that wine tasters, for example, often inhale air when drinking the drink, as it can enhance the taste of it.
