It is a new type of natural cereal obtained by combining a durum wheat ( Triticum durum ) and a wild barley ( Hordeum chilense ). The cereal, baptized as "Tritordeum" has been developed by the Higher Council for Scientific Research (CSIC).
Tritordeum represents the first hybrid cereal with a Spanish seal that will reach human consumption , since its commercialization is a reality. Regarding its nutritional properties, despite not being a suitable food for coeliacs, it has a low gluten content and high levels of antioxidant molecules.
Although it is the first hybrid cereal (since it combines two different genomes) that is marketed for food, it is the second hybrid cereal created by man. The first was the "Triticale" , a cross between wheat and rye, which failed to reach the market since it has not reached the necessary quality to produce food products.
