Artificial intelligence can predict the flavors of drinks

The experts already say it, that company that does not already address its transformation process and does not apply the latest technological trends to its businesses will not survive. Artificial intelligence (AI) is going to permeate everything, and Calsberg has realized it.

Thus, Carlsberg is leading the process of incorporating artificial intelligence into its industry, and for this it has launched the Beer Fingerprinting initiative, a project that uses advanced sensors and metrics to map and predict the flavors of ‘blonde’ faster. . As the initiative is articulated, it could be used for any type of drink.

Jochen Förster, director of yeast and fermentation for the Carlsberg Research Laboratory, says that “ if we had sensors that would tell us up front if yeast could be used for large-scale beer production , and that would recognize the chemicals and flavors that compose it to predict what the final taste of the beer itself would be like, we would save a lot of work and we would advance our research faster . “

The laboratory then began to work on the development of these sensors with the University of Aarhus and the Technical University of Denmark, with the aim of establishing how to implement them in the different scenarios of the fermentation process. Microsoft also enters the scene in the project, in order to analyze the signals of the sensors themselves using artificial intelligence, and including machine learning algorithms to measure the flavors and aromas created by yeast and other ingredients.

The project started approximately six months ago and has an estimated duration of three years. Nowadays, sensors can differentiate between different flavors, and researchers are fine-tuning the system and developing software that makes life easier for technicians, who are not used to using AI for their daily work.

The objective of the Beer Fingertrinting Project is to trace a flavor footprint for each sample and reduce the time it takes to investigate their different combinations by up to a third, and thus help the company to obtain a greater number of types of beers that can be marketed. more quickly.

Calsberg and Microsoft are also working together on another transformation project in which the cloud is the base platform for the concept of “connected bar”. This is a pilot test in thirty pubs that uses the Internet of Things (IoT) to provide information to bar owners that helps them effectively manage their keg stocks, beer temperature, and improve profitability and your customers’ own experience. It would not hurt if this type of initiative also incorporated tips for users to make a responsible and moderate consumption . Artificial intelligence can certainly help that too.
