Coffee is decaffeinated in the roasting process. During it, steam is used to make the green beans swell . These are then washed with methylene chloride or simply with water, which is a natural solvent for caffeine.
While a normal coffee has 3 to 4.5% caffeine, a decaffeinated one has less than 0.3%.
