Carbohydrates like glucose provide 4 kilocalories per gram . When we eat more than we can use, what is left over is stored in small amounts in the liver and muscles in the form of a molecule called glycogen. If the excess is considerable, they are transformed into fat for a longer storage.
Fats are much more energetic foods, producing about 9 kilocalories of energy per gram , more than double that of sugar. Experts recommend that no more than 30% of the calories in our diet come from fat.
