When a beer is well drawn, a mountain of foam appears, essential in a good beer. Scientists from Harvard University have investigated its origin and claim that there are surfactants in beer, that is, substances capable of transforming surface tension .
These agents form round bubbles filled with air. As time passes, the beer is introduced into them by the force of gravity and the bubbles deform and collapse , dissolving the initial foam.
