The most famous examples of proteins are hormones , enzymes, and antibodies . They carry out an infinite number of functions: they serve to protect, they collaborate to maintain the pH, they transduce signals, etc. Its most important use is structural.

The main properties of proteins that allow their function and existence are stability, since the protein must be stable in the environment in which it is acting; and the solubility, necessary to solvate the protein. Other chemical properties are electrolyte capacity, pH buffer, and specificity.
