    2. Next, add the salmon and program to fry for 4 min at the reverse turn (at the same temperature and speed).
    3. We drain the salmon and reserve the liquid .
    4. Now, we place the butter and the onion in the glass and program 2 seconds at speed 5 so that the butter melts and warms up. Then, we fry it for 3 min at 120ºC in speed 1.
    5. Add the liquid that we reserve from the cooking of the salmon and the flour , and continue to fry for 3 more minutes on speed 2 (keeping the temperature at 120ºC).
    6. The next step is to incorporate the milk, pepper and salt, and mix for 10 seconds on speed 6.
    7. Finally, we add 1 tablespoon of the cooked salmon and program 8 min at 100ºC in speed 4. At the end, we let the mixture rest for 5 to 10 minutes inside the glass.
    8. Finally, add all the remaining salmon and mix well with a spatula.
    9. We transfer the dough to a bowl or container and wait for it to cool and then put it in the fridge for at least 8 hours.
    10. When the dough is cold, we assemble the croquettes and batter them with the beaten egg and the breadcrumbs.

When it’s time to serve, we fry our salmon croquettes with Thermomix in plenty of hot oil. We put them on absorbent kitchen paper to remove the excess oil and voila, enjoy!
