The lamb is perhaps the oldest meat-derived animal of all domesticated animals. They started breeding it in the Middle East at least 9,000 years ago. Culturally it has been used to express docility to the shepherd, and symbolizes meekness, innocence and purity (for something it is said “lamb of God”, as it was also an animal that used to be sacrificed as an offering). Lamb with caramelized onion is a delicacy worthy of all the gods.
Since ancient times, and not only in Judaism, the lamb was considered an animal that favored the good will of the gods. From it they used meat, skin and wool, and both in Judaism and Islam traditionally lamb meat is prepared on great festivals. Today, apart from its exquisite flavor, in our country lamb meat is perfect for special party menus, but its nutritional value is so high that it would be well worth incorporating it into the daily diet .
