The pudding, cake or bread pudding has its roots in English gastronomy, and it is a recipe for use, since since it was born it used remains of stale bread to, as it was said, “take advantage of them”. Although nowadays fresh bread or more expensive ingredients can be used for its preparation, the truth is that this dessert is rather humble, and in all cultures it has established itself as a traditional sweet.
Stale bread is usually soaked in milk overnight, then drained well until no liquid remains, and then mixed with all the ingredients. In many countries, bread pudding takes different names and different accompaniments. For example, in Spain there is a Murcian dessert which is Calatrava bread; in Argentina and Uruguay it is accompanied by dulce de leche; In Venezuela, which is called pan cake or burrera cake, it is baked as if it were a quesillo, in a mold spread with caramel, and raisins are added. In Peru it is a traditional homemade sweet and is prepared with raisins, walnuts and lemon zest. In Malaysia and Hong Kong it is accompanied by pastry cream and vanilla cream.
