Ingredients: 250 grams of dry bread 250 milliliters of cream 120 grams of wheat flour 100 milliliters of milk 50 grams of bacon 20 grams of butter 10 grams of breadcrumbs 1 egg and 1 yolk 1 onion 1 lemon Bread crumbs Parsley leaves Salt White pepper Preparation: Peel an onion and chop it finely together with some fresh parsley leaves. Reserve some parsley. Cut the bacon into small pieces and the bread into approximately 1 centimeter cubes. In a pan, fry the onion and bacon, add the chopped parsley. Reservation. Besides, combine the egg, the yolk, the milk and the cream in a bowl. Season with salt and pepper and reserve. Combine both preparations, add the lemon zest, breadcrumbs and flour. Mix carefully, without squeezing too much, cover with a napkin and let the dough rest for 20 minutes. Meanwhile, fill a saucepan with water and bring it to a boil to cook the meatball. Place a linen napkin on the counter, sprinkle on one side with butter and breadcrumbs, place the dough, press it with the napkin and carefully tie it at the ends. Tie the napkin with string and cook in boiling water for 45 minutes.Once the cooking time has passed, remove the meatball, open the napkin, spread it with butter, sprinkle breadcrumbs on top, and then chopped parsley. Let cool and rewrap in a clean napkin. Store in the refrigerator until ready to consume, or place it in a container to take on a picnic. Outdoors, the napkin meatball is very easy to eat.
