Preparation: To start, we preheat the oven to 180 ºC and spread a conical mold (like the traditional flan mold) with a little butter. Next, we put all the ingredients in the blender glass and beat until obtaining a homogeneous cream. Next, we pour the cream into the previously greased mold, sprinkle a little sugar on top and cover with aluminum foil. Bake in a double boiler for about 40 minutes, then remove the aluminum foil and continue cooking for another 30 minutes, or until the visible part of the quindim is golden brown. We remove from the oven and wait for it to come to room temperature before letting it rest in the fridge for at least 2 hours. After this time, we can unmold the quindim and serve it. Generally, quindim is a dessert that is eaten alone, but you can serve it with a little whipped cream (type chantilly) and add grated coconut on top to decorate. An additional tip: you can make your own coconut milk to prepare this quindim recipe. All you need to do is whisk 2 cups of hot water with 1 cup of grated coconut in the blender, then strain it through a non-dairy bag, mesh, or fine cloth. It will be a highly nutritious and cheaper coconut milk than the industrial ones. Let’s do it!
