Who can resist a good shortbread fresh out of the oven? Despite being a simple preparation, it has gained different versions around the world and each culture gives it its “distinctive touch”. Next, we bring you a recipe for Scottish Shortbread, the delicious Scottish shortbread cookies. You can prepare them at home with simple ingredients and in a very short time. - First, we put the oven to preheat to a temperature of 170ºC.
- Next, we sift the wheat flour and cornstarch and reserve in a bowl.
- In another bowl, beat the butter at room temperature with the icing sugar and salt with a whisk until a homogeneous mixture is obtained.
- Then we add the sifted flour and cornstarch to this mixture and mix gently . The idea is to combine the dry and wet ingredients so as not to leave lumps, but without kneading too much. If we see that the dough is very dry, we can rectify with a little water or milk.
- We sprinkle a little flour on our table or work surface, and we open the dough with a rolling pin until we achieve a thickness of approximately one centimeter.
- We cut the dough with a knife in the format that we like the most and repeat this step until it is used in its entirety.
- Finally , we prick each cookie with a fork to give them the characteristic appearance of the Scottish Shortbreads and achieve a more even cooking.
- We place the cookies on a plate or baking tray previously greased with butter and a little flour (if you use a non-stick plate, it is not necessary).
- We bake our shortbread cookies for 12 minutes in a preheated oven at 170ºC . We let them cool on a rack before we taste them.
An additional tip for your Scottish Shortbreads
In some versions a frosting is added over the typical Scottish shortbread cookies. Although it is not part of the more traditional recipes, this option provides a sweeter touch and a more striking finish. If you want to try it, just follow the steps below:
Ingredients for the glaze:
- Sifted icing sugar: 300 grs.
- Water: required amount
- Vanilla Essence: ½ teaspoon
- Colored crystal sugar: amount needed (optional)
Making the glaze for the Scottish Shortbreads:
- Add the water little by little to the icing sugar until you get a smooth texture.
- Perfume with the essence of vanilla.
- Dip the tops of the cookies in the frosting and decorate with the colored sugars.
