This spätzle recipe with cream of spinach, mushrooms and smoked tofu, is a delicious and healthy pasta dish that is worth trying. It can be prepared with Spätzle, German and Austrian pasta, with traditional pasta, or you can make homemade spätzle, one of the variants that we incorporate at the end of this preparation. Spätzle, also known as Wasserspatzen, Spätzli, Spätzlâ or Spatzen (“little sparrows”), are a pasta that is found in the kitchen of Germany, Austria and in Alsace, France. Homemade spätzle Ingredients: 325 grams of flour 200 milliliters of hot water 3 eggs Nutmeg Salt Preparation: In a bowl, pour the flour, salt and nutmeg. Add the beaten eggs and then pour the water little by little until it forms a creamy dough.Let it rest for a few minutes, put the water to heat and then shape the pasta. This can be done with a press or special strainer for spätzle, but if you don’t have it at home, you can shape it with various techniques, as it is not a dough that cannot be cut, but must be poured. The easiest way is to stretch the dough on a board and remove thin strips with a knife, which are placed directly in the boiling water. If the pasta is cooked in the traditional way, the spätzle are ready when they start to float to the surface, like gnocchi.
