Ingredients:
Elaboration:
- In a saucepan, we heat the water (without letting it boil!) And sift two tablespoons of matcha green tea . We stir continuously so that lumps do not form and the tea dissolves completely. Next, we add the rum or cognac and mix again . Let cool and reserve.
- In another saucepan or bowl, beat the egg yolks with half the sugar until white using a whisk. If you want, you can do this step in the blender.
- Now, we add half of the mascarpone to the beaten eggs and mix with a spatula, gently pressing the cheese to combine the ingredients.
- When we get an almost homogeneous cream, add the other half of the mascarpone, and mix again. As the mixture will already be thicker, we can use the whisk to integrate the ingredients and achieve a completely homogeneous cream.
- Now, it ‘s time to beat the whites with the other half of the sugar to get a shiny meringue. In this step, it is important to add the sugar little by little (in three batches, more or less). To make it easier, you can use the hand mixer and place the bowl with the whites on one of ice water (or ice water).
- Next, we add half of the meringue to the mascarpone mixture. Mix gently with a spatula making enveloping movements so that the whites are incorporated without losing their volume.
- We repeat the previous step with the other half of the meringue and combine again with the help of a spatula.
- We have everything ready to start assembling our matcha tiramisu. We start by dipping the cakes in the matcha tea dissolved in water and rum until they soften . Drain the surplus and we place them in the source that we have chosen to serve.
- We make a complete layer with the cakes and add a layer of the mascarpone cream on top .

- Next, we complete another layer of biscuits and one more of mascarpone.
- At the end, we put the dish in the fridge for at least 3 hours before serving our matcha tiramisu.
An additional tip : when it is time to serve the matcha tiramisu, sprinkle some powdered matcha tea to decorate, give a more striking color and reinforce the flavor of your dessert. Enjoy your meal!
