Remove from heat and dry on absorbent paper. Place the tomato sauce in a bowl, add 1 tablespoon of olive oil, salt and finely chopped basil. Stir and spread a layer of sauce in an ovenproof dish. On top, spread the fried zucchini, slightly overlapping. Beat an egg and add a little salt and pepper. Separate into two parts and pour one of them over the vegetables.Next, cover with a layer of mozzarella, top with the sauce, then the grated cheese and another layer of zucchini. Add the rest of the beaten egg, then the mozzarella, tomato sauce and finish with grated Parmesan cheese. Bake in a preheated 180 ° C oven for about 30 minutes, or until the cheese is golden brown. Remove from the oven, let it cool slightly, cut into portions and serve, decorated with some basil leaves.
